With the holidays right around the corner, so is the temptation of unhealthy holiday treats. Don’t lose sight of your health as you navigate through the season. Stay on track by testing out these tasty recipes that are sure to woo your family and friend’s taste buds.

- 2 cups nonfat milk
- 2 large strips orange and/or lemon zest
- 1 vanilla bean
- 2 large eggs plus 1 egg yolk
- 1/3 cup sugar
- 1 teaspoon cornstarch
- Freshly grated nutmeg, for garnish
Combine 1 1/2 cups milk and the citrus zest in a medium saucepan. Split the vanilla bean lengthwise and scrape out the seeds; add the seeds and pod to the saucepan and bring to a simmer over medium heat. Meanwhile, whisk the eggs, egg yolk, sugar and cornstarch in a medium bowl until light yellow.
Gradually pour the hot milk mixture into the egg mixture, whisking constantly, then pour back into the pan. Place over medium heat and stir constantly with a wooden spoon in a figure-eight motion until the eggnog begins to thicken, about 8 minutes. Remove from the heat and immediately stir in the remaining 1/2 cup milk to stop the cooking. Transfer the eggnog to a large bowl and place over a larger bowl of ice to cool, then chill until ready to serve.
Remove the zest and vanilla pod, and garnish with nutmeg.

- 3 packages frozen broccoli florets, thawed
- Cooking spray
- 1 ½ cups fat-free milk
- 2 ½ tablespoons all-purpose flour
- ½ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- ¾ cup shredded sharp cheddar cheese
- ½ cup fat-free cream cheese, softened
- 1 cup fat-free mayonnaise
- ¾ cup chopped onion
- 1 can of water chestnuts, rinsed, drained, and sliced
- ¾ cup panko (Japanese breadcrumbs)
- 2 teaspoons butter, melted
Preheat oven to 375°.
Arrange broccoli in an even layer in an 11×7 inch baking dish coated with cooking spray; set aside.
Combine milk, flour, salt, and pepper in a large saucepan over medium-high heat; bring to a boil. Cook 1 minute or until thick, stirring constantly. Remove from heat. Add cheddar and cream cheeses; stir until smooth. Stir in mayonnaise, onion, and water chestnuts. Spoon cheese mixture evenly over broccoli.
Place panko in a small bowl. Drizzle with butter, and toss. Sprinkle breadcrumb mixture evenly over cheese mixture. Lightly spray breadcrumb layer with cooking spray. Bake at 375° for 25 minutes or until mixture begins to bubble and breadcrumbs brown.
